Spices of the World: India — A Flavorful Journey Through Regional Cuisine

At Spice-A-Bowl, our goal is much more than simply combining ingredients—we see ourselves as storytellers of culture, history, and heritage. Welcome to our Spices of the World series, where we will take you on a culinary expedition around the globe, one spice card at a time. There is no better place to start than the spice capital of the world: India.

India has a long and fascinating history with spices. As early as 2000 BCE, the Indus Valley civilization was already trading turmeric and black pepper. By the time of the Roman Empire, Indian spices were being transported across oceans. India has been both a producer and curator of spice knowledge since the days of the Silk Road and through the spice trade, and has imparted its culinary traditions with vibrant, healing, and culturally significant flavors.

But this is what makes Indian food unique: it is not homogenized. Each region has its own unique flavors, methods and practices. Here at Spice-A-Bowl, we believe that it is essential to pay homage to these differences when creating an authentic spice blend; this is why we spend hours researching regional cuisines, exploring traditional recipes, and gathering input from home cooks and food lovers to recreate each mix to the heart of its place of origin.

Let’s explore the incredible diversity of Indian cuisine region by region:

North India: Creamy, Bold, and Tandoori-Fired

In North India, spices are rich, aromatic, and deeply layered. Influenced by centuries of Mughal rule, this region is known for luxurious dishes like butter chicken, rogan josh, and dal makhani. Think wheat-based breads like naan and roti, paired with thick, tomato-based gravies.

Our North Indian spice blends often feature cumin, coriander, cardamom, and garam masala—a heady mix of warm spices that bring depth and comfort to every bite. These spices also support digestion and balance, making them both flavorful and functional.

Notable fact: North India is the birthplace of tandoori-style cooking, where marinated meats are cooked in a clay oven, creating an irresistible smoky finish.

West India: Coastal Meets Royalty

Western India is a fusion of flavors from Maharashtra, Gujarat, Rajasthan, and Goa. Here, spice meets sweetness in dishes like pav bhaji and vada pav, while coastal states like Goa bring Portuguese influence with tangy vinegar-based seafood curries.

Common spices include mustard seeds, curry leaves, kokum, goda masala, and asafoetida. These ingredients are not only flavor boosters but also promote gut health and appetite stimulation.

Fun fact: Goa’s cuisine blends Indian and Portuguese traditions, resulting in a flavor profile that’s both bold and balanced—much like our Goan Fish Curry blend.

Central India: Simplicity with Substance

In the heart of India lies Central India, home to states like Madhya Pradesh and Chhattisgarh. This region offers dishes like poha, dal bafla, and bhutte ka kees—simple yet soulful meals rooted in tribal and royal legacies.

Spices here include fennel, coriander, mustard seeds, and cumin, which aid digestion and metabolism. Our Central India-inspired spice mixes focus on earthy warmth and comfort—perfect for easy, nourishing home meals.

Did you know? Indore, one of the region’s key cities, is often called the "Food Capital of Madhya Pradesh" due to its legendary street food scene.

South India: Spicy, Tangy, Coconut-Infused

Welcome to the land of dosas, sambar, and coconut chutneys. South India thrives on rice, lentils, and an abundance of spice. Tamarind, curry leaves, mustard seeds, and red chilies are staples here, giving dishes their signature tangy, spicy kick.

Spice-A-Bowl’s South Indian blends showcase the intense yet balanced flavors of this region. From our Kerala Fish Curry card to Chettinad Chicken, we’ve created spice mixes that honor both the boldness and nuance of southern cuisine.

A spicy detail: Kerala is known as the “Land of Spices” and was once a major hub in the ancient spice trade, exporting black pepper and cardamom globally.

East India: Subtle, Sweet, and Aromatic

East India, particularly Bengal and Odisha, is known for its fragrant, lighter fare. Think mustard oil, fish curries, and delectable sweets like rasgulla and mishti doi. The dishes here balance subtle heat with refreshing acidity and a touch of sweetness.

Spices such as panch phoron (a Bengali five-spice blend), bay leaves, green chilies, and nigella seeds are essential. These spices create a flavor profile that is both soulful and delicate—perfect for adventurous home cooks looking to expand their palate.

West Bengal’s culinary heritage is shaped by both local produce and cross-cultural exchange, and we’re proud to bring those flavors to your kitchen.
