• 1 lb shrimp or chicken, cubed
• 1 ½ cup coconut milk
• 3 bell peppers, sliced
• 1-2 cups of veggie of your choice (zucchini, carrot, mushrooms)
• 1 lime
• Fresh basil or cilantro for garnish

Vegetarian

• 1 lb paneer, cubed
• 1 ½ cup coconut milk
• 3 bell peppers, sliced
• 1-2 cups of veggie of your choice (zucchini, carrot, mushrooms)
• 1 lime
• Fresh basil or cilantro for garnish

Plant-based

• 1 block (14 oz) firm tofu, cubed or 1 can (15 oz) chickpeas, drained
• 1 ½ cup coconut milk
• 3 bell peppers, sliced
• 1-2 cups of veggie of your choice (zucchini, carrot, mushrooms)
• 1 lime
• Fresh basil or cilantro for garnish

Choose a recipe and follow theses steps!

1. Curry Mix

Press and peel the back of each spice pod to open. Toast the coriander seeds on high heat until fragrant, and use a coffee grinder or a mortar and pestle to grind it into powder. Mix with all other spices.

2. Cook

In a medium pot, add protein of your choice and cook until done. Add 1 1/2 cup of coconut milk and bring to a simmer. Add the curry mix, a squeeze of lime, water, veggies of your choice and stir to mix. Taste and adjust with salt and pepper if necessary. Enjoy!
